Vegetable chips: parsnip & carrots 

Who does’nt love chips (or fries)? Tasty, crunchy, soft potato fries with ketchup on the side. Yumm! Super delicious, but unfortunately not very healthy and most definately not part of my clean eating diet. (Not that I never eat chips, I love a side of chips when I order from my favourite burger place)

Of course you have air fryers that make them a healthier option OR you can take some of your favourite veggies, cut them into chips shaped pieces and ta-daa!: your homemade, healthy, vitamin packed and most importantly delicious chips that taste better than the ones you get at the chipper; I promise.

Stuffed paprikas with minced beef and feta cheese

What do you do when you might have overshopped a little at the market and you still have four paprikas in the fridge, which you really need to eat within now and two days? Yes, you make roasted, stuffed paprikas. It has been a while since I made them and I forgot how simple they were to make. They really do not take up a lot of your time, but you do get maximum flavour. If you of course use the right herbs, spices and fillings, but don’t worry I have a recipe here that you have to try if you are planning on making them.

More Veggies #4: Beetroot vegetable pie

When I spotted this Beetroot vegetable pie (plaattaart) in the Allerhande, I knew that this had to be next vegetarian dish. It looked so delicious and simple that I had to try it and oh I am so happy I did. For my readers that do not live in the Netherlands; Allerhande is a monthly magazine from the Albert Heijn (one of the largest supermarkt chains here). I use it as one of my many inspiration sources. This recipe is filled with fresh vegetables (which I all bought on the market), it is very simple and the ingredients used can be easily substituted if you wish, which is something that I did.

Carrot apple lime juice

As you may or may not have seen on my Instagram account (Bitsnbitez) I am now the proud owner of a Princess juicer. Finally, because I wanted one for ages. I made juices twice before in a food processor and then put it trough a strainer. I can hear you think: ”That must have taken you ages!” and yes it did. But those days are over. Do you like spicy food? Then look no further I got the dish for you. These spicy pork strips in soy sauce are, well spicy. But don’t worry if you use the right amount of peppers you will be just fine. And if you are a bit stubborn like I am then, well, you will definately know how much to use the next you cook it.

More veggies #3: red lentil curry

Week 3. I really start to be more creative with my food and recipes. I was already thinking of making this dish when I first cooked red lentils. I thought they were going to be similar to black lentils, which are quite firm. But these red ones fell apart and the dish that I made then was somewhat ruined. I researched red lentils for a bit and found that most people use it for red lentil soup and red lentil curry, so this could not miss my More Veggies challenge.

Prawn risotto with mushrooms and peas

I had the best foodie weekend ever. Friday I made this delicious prawn risotto with one of my good friends, scroll down for the recipe. On Saturday, after a trip to the market, I had a super tasty roasted chicken stuffed with lemon and thyme (unfortunately I did not write the recipe down of this one).

It has been a while since I went down to the market, I forgot how much I enjoyed it. So much to choose from, really fresh products and great place to shop on a budget. So get ready for some tasty recipes with really fresh products in the upcoming weeks.

More Veggies #1: Mushroom pasta

I love trying new things in life. Learning a new language, get a new hobby, travel to places I haven’t been yet and of course trying new foods. Growing up, we usually ate a lot of the same things for dinner; boiled potatoes, boiled vegetables and a piece a meat and in winter time the Dutch ‘stampots’. Of course those three things would vary every day and when my mom had less time to cook we would  occassionally eat pasta bolognese or lasagne. (I love lasagne) When I started living on my own I was delighted that I could choose every evening what I wanted to eat.

Christmas traditions

Christmas has officially begun. According to the songs the most wonderful time of the year. I, as a foodlover, cannot entirely disagree with this statement. I love Christmas dinners where the entire family and loved ones are sitting around the table eating food that someone spent hours preparing, drinking wine that you normally wouldn’t buy, and watch movies that are only allowed to be watched around this time of year.
